Propiedades fisicoqu\u00edmicas del almid\u00f3n extra\u00eddo de \u00f1ame (Dioscorea rotundata) y batata (Ipomoea batatas)<\/p>\n<h2>Resultados<\/h2>\n<p><strong>Morfolog\u00eda de gr\u00e1nulos (Fig. 1A y 1B):<\/strong><\/p>\n<ul>\n<li>Ipomoea batatas: gr\u00e1nulos de almid\u00f3n con formas poligonales, ovaladas y semiovaladas, de tama\u00f1os variados.<\/li>\n<li>Dioscorea rotundata: gr\u00e1nulos ovalados y el\u00edpticos, con superficies lisas y sin fisuras, lo que indica alta pureza.<\/li>\n<\/ul>\n<p><strong>Espectros FT-IR (Fig. 1C y 1D):<\/strong><\/p>\n<ul>\n<li>Se identificaron picos caracter\u00edsticos en 996.27, 1086.93 y 1162.16 cm\u207b\u00b9, asociados a grupos funcionales C\u2013O, C\u2013C y O\u2013H, relacionados con estructuras ordenadas del almid\u00f3n.<\/li>\n<\/ul>\n<p><strong>Difracci\u00f3n de rayos X (XRD) (Fig. 1E y 1F):<\/strong><\/p>\n<ul>\n<li>Dioscorea rotundata: patr\u00f3n tipo A con picos en 15\u00b0 y 23\u00b0.<\/li>\n<li>Ipomoea batatas: patr\u00f3n tipo CA con picos en 17\u00b0 y 23\u00b0.<\/li>\n<\/ul>\n<h2>Conclusiones\/ Recomendaciones<\/h2>\n<p>En este estudio ha caracterizado el almid\u00f3n extra\u00eddo de <i>Dioscorea<\/i> <i>rotundata <\/i>e <i>Ipomoea<\/i> <i>batatas<\/i>. Estas caracterizaciones son importantes para aplicaciones alimentarias y no alimentarias, por lo que estudios futuros deber\u00edan centrarse en la modificaci\u00f3n estos almidones para su aplicaci\u00f3n como materia prima en procesos de producci\u00f3n de
